Chicken, Cherry Tomato, Basil and Garlic Bake

Serves: 4

Time: 90 - 120 mins

Ingredients

  • 1kg cherry tomato 

  • 1 bulb garlic 

  • 1kg new potatoes halved 

  • 1 bunch basil 

  • Pinch chilli flakes 

  • Salt and pepper 

  • 1 tin cannellini beans drained 

  • 1 tbs balsamic 

  • 12 skinless chicken thighs 

Method

  1. Preheat the oven 180 degrees

  2. Place all of the ingredients into a roasting

  3. dish, drizzle with a good glug of extra virgin olive oil. Give it a good toss together and lay the chicken on the top

  4. Cover with foil

  5. Bake for 45 minutes

  6. Remove the foil, give it a stir and cook for a further 45-60 minutes until the tomatoes are sticky and the chicken cooked

  7. Serve with a salad or veg
