Chicken Fajitas

Ingredients

For the chicken:

  • 4 chicken breast cut into thin strips 

  • 2 tbs olive oil 

  • 2 tsp oregano 

  • 1 tsp cumin 

  • 1 tsp smoked paprika

  • Zest and juice 1 lime 

  • Salt and pepper

    To serve :

  • 8 tortillas / wraps 

  • Salad 

  • Sour cream / mayo 

  • Choice of salsa / guacamole 

  • 1 lime cut into wedges 

Method

  1. Mix all of the ingredients for the fajitas in a bowl 

  2. Leave to marinade for 15 minutes (or in the fridge - can be done overnight or in the morning 

  3. Heat a frying pan until smoking hot 

  4. Add a tiny slash of oil 

  5. Add the chicken, stir fry for 6-8 minutes until the peppers are charred and chicken cooked 

  6. Take off the heat 

  7. Squeeze in the remaining lime 

  8. Serve in a wrap with a handful of salad and choice of sauce or dips
