Chicken Fajitas
Ingredients
For the chicken:
4 chicken breast cut into thin strips
2 tbs olive oil
2 tsp oregano
1 tsp cumin
1 tsp smoked paprika
Zest and juice 1 lime
Salt and pepper
To serve :
8 tortillas / wraps
Salad
Sour cream / mayo
Choice of salsa / guacamole
1 lime cut into wedges
Method
Mix all of the ingredients for the fajitas in a bowl
Leave to marinade for 15 minutes (or in the fridge - can be done overnight or in the morning
Heat a frying pan until smoking hot
Add a tiny slash of oil
Add the chicken, stir fry for 6-8 minutes until the peppers are charred and chicken cooked
Take off the heat
Squeeze in the remaining lime
Serve in a wrap with a handful of salad and choice of sauce or dips
