Warm Orzo Salad With Honey Glazed Halloumi

Serves: 4

Time: 20 - 30 mins

Ingredients

  • 300g orzo pasta 

  • 2 courgette cut into 1/2 cm slices 

  • 2 red onions sliced 

  • 1 clove garlic grated 

  • 2 tsp oregano or mixed herb 

  • Good pinch of salt and pepper 

  • 1 tin chickpeas drained 

  • Small bunch of mint chopped 

  • Handful cherry tomatoes halved 

  • Halloumi cheese cut into 1/2 cm slices 

  • 2 tbs honey 

Dressing:

  • 4 tbs extra virgin olive oil 

  • 1 tsp honey 

  • Salt pepper 

  • Zest of a lemon 

  • Juice 1/2 lemon 

Method

  1. Preheat the oven 200 degrees fan 

  2. Lay the courgette, onion, garlic and oregano onto a baking tray. Drizzle with oil. Season with salt a pepper then toss together 

  3. Roast for 20-30 minutes until the courgette is beginning to char 

  4. Cook the orzo according to packet instruction 

  5. Drain then add to a large mixing bowl 

  6. Add the mint, tomatoes, chickpeas and dressing along with the cooked courgette and onion 

  7. Toss together 

  8. For the halloumi cheese

  9. Heat a large non stick frying over a high heat heat, fry the cheese for 2 minutes each side or until golden 

  10. Squeeze in the honey then turn off the heat, coat the cheese in the honey

  11. Place the halloumi cheese over the salad and serve
