Warm Orzo Salad With Honey Glazed Halloumi
Ingredients
300g orzo pasta
2 courgette cut into 1/2 cm slices
2 red onions sliced
1 clove garlic grated
2 tsp oregano or mixed herb
Good pinch of salt and pepper
1 tin chickpeas drained
Small bunch of mint chopped
Handful cherry tomatoes halved
Halloumi cheese cut into 1/2 cm slices
2 tbs honey
Dressing:
4 tbs extra virgin olive oil
1 tsp honey
Salt pepper
Zest of a lemon
Juice 1/2 lemon
Method
Preheat the oven 200 degrees fan
Lay the courgette, onion, garlic and oregano onto a baking tray. Drizzle with oil. Season with salt a pepper then toss together
Roast for 20-30 minutes until the courgette is beginning to char
Cook the orzo according to packet instruction
Drain then add to a large mixing bowl
Add the mint, tomatoes, chickpeas and dressing along with the cooked courgette and onion
Toss together
For the halloumi cheese
Heat a large non stick frying over a high heat heat, fry the cheese for 2 minutes each side or until golden
Squeeze in the honey then turn off the heat, coat the cheese in the honey
Place the halloumi cheese over the salad and serve
