Chicken Chorizo Tray Bake
Ingredients
1kg new potatoes halved
8 tomatoes quartered
2 peppers rough 1 inch dice
100g chorizo roughly chopped
1 tbs oregano (or any dry herbs)
1 tbs smoked paprika
2 tbs extra virgin olive oil
Salt and pepper
12 skinless boneless chicken thighs
Method
Preheat the oven to 200 degrees fan
Chuck all ingredients into a roasting tin, get your hands in and give it a good mix together so everything is evenly coated in the oil, herbs and spices then arrange the chicken evenly to the top of the dish
Roast for around 60 minutes until the chicken is cooked and potatoes begin to crisp
Give it a stir every 20 minutes, basting the chicken in the pan juices
Serve with a squeeze of lemon or drizzle of Balsamic or Vinegar
